Baked Potato Chips

Today is not a Sunday but in some parts of the world, it still is! Ha! Excuses! I just cannot wait to share this new recipe that I've tried this morning. If you know me, I love watching television series (and eating). Sometimes, I would crave really bad for some potato chips so instead of reaching for that bag of processed goodness, why not make your own?


- A bag of large potatoes (Five pieces would do)
- Quickmelt Cheese
- Extra Virgin Olive Oil (EVOO)
- Japanese Breadcrumbs
- Parmesan Cheese
- Herbs, Spices and Seasoning (Black Pepper, Salt, All Spice, Spanish Paprika, Hamburger Seasoning, Garlic Granules and Parsley)


- Slice potatoes as thin as possible (If you have a mandoline, best to use it!)
- While you're slicing, pre-heat oven to 400°F
- Drizzle a bit of EVOO to your sliced potatoes, coat it evenly.
- Add your Herbs, Spices and Seasoning

- Spray some canola oil on the tray (so that the potatoes wouldn't stick) then line up your potatoes on the tray.
- Top with Japanese Breadcrumbs and Parmesan Cheese
- Bake for 15 minutes

- After 15 minutes, remove from the oven, add the Quickmelt Cheese then bake for another 10-15 minutes

Finished product! :) I'm actually good with just the Parmesan Cheese but if you want it cheesier then don't scrimp on the Quickmelt Cheese (As you can see above, I only put a handful).

Thinking of making another batch of this but with bacon bits and green bell pepper on top. Kind of a deconstructed baked potato :)
