When the opportunity came to go to Japan this year, I hesitated. I thought the extra work of getting a visa would be a hassle and I would just pass up. Then it got me thinking, with a Philippine passport, there are so many countries that requires a visa so might as well start now and perhaps build my travel reputation ;)

Fortunately, applying for a Japan Visa is easy breezy. I submitted the most basic requirements and got my visa after three working days.

My love for pizza is not intentional. I can't even remember when I started liking this dish. All I know, I love making (and eating) it with lots of mushrooms and green bell pepper. Today, I'm presenting you with an easy recipe for days that you just don't want to order the usual or when you just want to eat something homemade. Play it up. Long time no see! I haven't had the time to properly sit down, cook and update this little blog. I'm still in a daze, thinking about my recent vacation (which was beyond lovely!) and the places I would like to go to next (I think I got bitten by the travel bug). Thank God, I have such a reliable travel buddy (Thanks M :-*) who made the trip the best one yet and at the same time took care of me while I'm still recovering from my sickness (Bad cough and cold! :|)

We went to this quaint town called Coron in Palawan. It was amazing!!! I got to do some legitimate snorkeling (if you know me, I'm not much fond of the sea and do not enjoy this kind of activity but this time, I actually had fun!), was able to go up Mt. Tapyas, tried the hot spring and enjoyed good food.

Aren't vacations just delightful?


Egg Baguettes

I've developed quite a liking to french baguettes. I especially loved the whole wheat baguettes you can buy at French Baker. It's a good base for a sandwich and when you cut it in half, you can use it as an alternative to pizza crust (IMHO, it is not the same thing as an authentic dough but it works).

I've been meaning to try a version of a soup in a bread bowl but instead of soup, it would be eggs and cream. These egg baguettes are almost perfect! Okay, I said almost because I experienced a difficult time cutting through the bread and unstuffing its insides.

I have to figure out an easier and better way to do this but for now this would have to do ;)

Strawberry Popsicles


I feel like it is one of the hottest summers in the Philippines. It is just the perfect time for some homemade popsicles. I received a set of popsicle molds from a dear friend (Thanks again Ica! :-*) last year and I think I've only used it twice. I was really lazy and impatient to wait for these things to freeze!

However, I decided that these popsicle molds deserve more exposure! They actually turned out pretty well even if I just eyeballed the measurements. Say hello to some homemade Strawberry Popsicles, aside from the strawberries, it has a bit of lemon and pineapple juice for some tart.

Spiced Shrimp

If you haven't guessed, I am a big fan of shrimp. These crustaceans are one of my favourites. My love for shrimp started early when I would stuff my mouth with Shrimp Tempura at least once every week. A fun fact: An average shrimp has 10 legs!!! ;)

Since we have a bit of shrimp available, I wanted to try something new and divert from the usual buttered shrimp. I remember this spiced chicken fajitas that I made a year back and thought that the spices could work as a marinade. It did work well! :)

I often find myself skipping breakfast, mostly due to time and my lack of desire to eat fast food. Luckily, I've come across a recipe that I can actually prepare the night before. Ingredients are simple and easy to prepare. Eggs can also be boiled the night before. Since I'm quite picky with my meat, I would heat the ham and cook the bacon in the morning. Reheat the sandwich in a toaster and you're good to go! ;)

You know how sometimes you want something a bit different for lunch. No offense on the staple Nilagang Baka and Sinigang. Sinigang na Hipon is actually one of my favourites. I thought we could make some fancy schmancy Buttered Shrimp. There's actually nothing fancy on this dish but it looks so appetising when it's done. Thank you plating and lighting! :P

Ah, Fridays! I was finally able to make time to cook something anything for this blog. Woah! It's already the third month of the year and I feel that there are more things in store for this year. Crazy! I've been hoarding recipes, listing ingredients and itching to cook something but I wasn't able to do any for the past month. Blame it on my vacation hangover, if only I could travel and eat for the better part of the year, I would! ;)

So today, I made my own pizza boat. If you noticed, I've been doing different renditions of pizza -- from tortilla crust to a homemade one and now this pizza boat. My love for pizza is evident. Haha! It's a full meal in itself and you can just chuck any ingredient you want on top.

Happy 1st of February! I can't believe that January is long gone, time really flies! On the other hand, I'm really looking forward to this month because 1.) Someone special is coming home! 2.) I will be celebrating V-DAY for the second time with this special person. 3.) Vacation for two weeks!
