Spinach, Mushroom and Cheese Crustless Quiche

Long time no see! 23 days late for a Happy New Year greeting but still, Happy New Year All! It has been a busy month but I am not complaining. I am just delighted to finally have the time to cook, eat and blog.

Let me start off with this great breakfast dish that you can make this weekend. It's filling, cheesy but most of all yummy!



Ingredients

- 2 tablespoons extra virgin olive oil
- 1 can mushrooms, sliced thinly
- 1 bunch of spinach, blanched then chopped
- Quickmelt Cheese, cubed
- 6 eggs
- 1 cup fresh milk
- 1/3 cup Parmesan Cheese
- 1 teaspoon garlic granules
- a pinch of salt and pepper
- herbs (tarragon, thyme, parsley)

Procedure

- Pre-heat oven to 350°F
- Sauté mushrooms in olive oil, add herbs then set aside
- In a bowl, whisk together your eggs, milk, Parmesan Cheese, garlic granules and a bit of salt and pepper


- Using a pie pan, lay out your mushrooms and spinach


- Pour mixture over spinach and mushrooms


- Top with cubed Quickmelt Cheese


- Bake for 20-40 minutes or until cooked (I used a toothpick to check its consistency)


Slice and Serve!

You can also mix and match ingredients such as ham, cheese, bacon and mushrooms. I would definitely make this again, it is just perfect for leisurely breakfasts during the weekends.
