Chocolate Covered Peanut Butter Fita Crackers

Happy 1st of February! I can't believe that January is long gone, time really flies! On the other hand, I'm really looking forward to this month because 1.) Someone special is coming home! 2.) I will be celebrating V-DAY for the second time with this special person. 3.) Vacation for two weeks!

Sharing the love and recipe for these delicious treats. So without further ado, here's some Chocolate Covered Peanut Butter Fita Crackers.


- 2 packs of Fita Crackers
- 1/4 cup powdered sugar
- 1 cup chocolate, melted (I used a local chocolate brand, Dutche! They have this big bar of chocolate, you can cut to small pieces then melt using a double broiler)
- Creamy Peanut Butter


- Mix together powdered sugar and peanut butter
- Spread a small amount of peanut butter onto one cracker then sandwich together, repeat
- Place in the freezer for 30 minutes
- Melt your chocolate using a double broiler, make sure it is smooth and silky
- Now, the fun part! Dip your chilled sandwich crackers into the melted chocolate, shake off excess chocolate
- Place on a wire rack and let it set for about an hour
