Strawberry Popsicles

I feel like it is one of the hottest summers in the Philippines. It is just the perfect time for some homemade popsicles. I received a set of popsicle molds from a dear friend (Thanks again Ica! :-*) last year and I think I've only used it twice. I was really lazy and impatient to wait for these things to freeze!

However, I decided that these popsicle molds deserve more exposure! They actually turned out pretty well even if I just eyeballed the measurements. Say hello to some homemade Strawberry Popsicles, aside from the strawberries, it has a bit of lemon and pineapple juice for some tart.

What you'll need? 
!!! Word of Warning: I eyeballed the measurements so taste frequently and adjust accordingly !!!

- 1/2 cup brown sugar
- 1/2 cup water
- a pack of strawberries, roughly sliced
- lemon juice (half a lemon would do)
- 1 cup of pineapple juice
- vanilla extract
- lemon extract

What to do?

Combine sugar and water in a small pot. Stir until the sugar is dissolved. In a mixing bowl, mix strawberries, lemon juice and pineapple juice. Add some vanilla and lemon extract. Taste and adjust according to your liking. Once you are happy with your mixture, pour inside popsicle molds. Freeze overnight.
