Whole Wheat Broccoli and Sausage Pasta

I can’t believe that it is already the first week of April. It seems like time just flew by and now here we are trying our best to keep up with our resolutions. I honestly want to practise more cooking and less eating (out). So today on the blog, I’ll share one of the dishes I have prepared a few weekends back. It is easy, quick and most importantly delicious! Ingredients can easily be bought at your local supermarket so you don’t have any excuses! ;)

Whole Wheat Broccoli and Sausage Pasta

250 grams of whole wheat penne pasta 
2 tablespoons of extra virgin olive oil 
1 Tablespoon Butter (Unsalted) 
4 Cloves of garlic, diced
 2 pcs. of sausage, chopped (For variety, I used 1 Hungarian Sausage and 1 Cheese Frankfurter) 
1 bunch of broccoli cut in small pieces 
Parmesan cheese 
½ cup of sliced button mushrooms 
Salt and pepper to taste

Cook the whole wheat pasta according to package instructions, during the last few minutes of cooking, add the broccoli, once done, drain and reserve at least a cup of pasta water. 

On a pan, heat the olive oil and butter, add garlic and mushrooms. Now add the sausage to the mix and cook, stir occasionally until brown. 

Add the pasta, chopped broccoli to the mix. 

Add parmesan, salt and pepper to taste. Mix well. 

Serve warm with toasted bread or even as it is :)
